Background
Deoxynivalenol (DON) is a mycotoxin produced predominantly by Fusarium fungi. It is one of the most prevalent and toxicologically significant trichothecenes found in food and animal feed. Due to its widespread occurrence in crops such as wheat, corn, oats, barley, and rice, DON is considered a major global food contaminant. Contamination can occur both in the field and during storage.
Associated Health Risks
Human exposure to DON can lead to acute gastrointestinal symptoms such as nausea, vomiting, diarrhea, abdominal pain, headaches, dizziness, and fever. Long-term or repeated exposure may result in more serious effects, including:

The intestinal toxicity of DON is believed to be related to mitochondrial dysfunction triggered by reactive oxygen species (ROS), making oxidative stress a key contributor to its harmful effects.
